Deep sea fishing does still happen offshore of Grand Cayman but reef fishing is now very much off the table. There is even a call to ban it entirely. The number of reef fish throughout the Cayman Islands has dropped precipitously in the last ten years and residents are on a mission to stay the steep decline. Fishermen have even removed the incredible large groupers who used to come up to divers and hang out with them as they dived, looking into holes in the rocks with you! Locals call them the 'puppies of the sea' as they are so friendly and sociable. In Little Cayman you can still go fly fishing with an experienced guide but it is all done by catch-and-release. If you see grouper being served on a restaurant menu or in a grocery store please do not order it. They will say it is from overseas but please still do not buy it. The most sustainable wild fish to buy/order is mahi mahi. It grows fast, is low in mercury and is delicious. If you would like to learn more about this problem then here is an article appealing for restaurants to remove reef fish from menus. Here is an article by Courtney Platt, a famous local photographer and life-long scuba diver, explaining why we should not be eating reef fish. Here is Courtney's TED Talk on not consuming reef fish.
If you can afford to eat anything else please do!
